Recipe: take oil in a pan ,add oil when it is hot add cumin seeds let it splutter,now add chopped onion,green chilli pieces,fine chopped garlic and ginger saute for a few seconds on slow medium flame till onions turn pinkish.Then add all dry ingredients [masalas] ,mix it well add tomatoes puri & mix it well with little water, cook it for 4-5 seconds.
Remove the pan from the flame ,make four cuts on each brinjal,and fill the ready onion tomato mix in each brinjal. Now on the flame & keep the pan on the slow flame, sprinkle little water ,keep the lid on the pan.
Check & cook stuffed brinjals from all sides .keep lid ,on steam cook the brinjals for a few minutes. Surve with parantha or roti . Enjoy happy cooking.
