Ingredients :
1) 3 long brinjals, 2) 2 medium size onion, 3) 2 big tomatoes, 4) 1&1/2tsp.
ginger -garlic paste, 5) 1tsp. red chilli powder(tikha lal) + 1tsp. red kashmiri red chilli powder, 6)1tsp.coriander poser, 7)1/2 tap. garam masala, 8) 1tsp cumin seeds, 9) salt as per your taste, 10) turmeric powder, 11) 3tbs. Cooking oil ,12 ) Asafoetida.
Method:
Take a non stick cookware, put oil make it warm add cumin let it splutter add chopped onions, add asafoetida, Fry it till it becomes pinkish now chopped tomatoes, stir it properly, when it is smashed add little water n mix it nicely, now add peices of brinal & potatoes, mix it well, add little water, cover pan with lid, after each n every five minutes stirring is needed. When potatoes n brinjal cooked well switch off your gas stove. Enjoy your cooking, eat with parantha or chapatis.
