                                                       Poha Chivda - Tea time snack.



Recepie: 1/2 kg  (nylon poha)patla Poha,1/2 dry coconut, 1/2 katori ground nut ,kadi leaves, 1/4 sp.  turmeric powder, musterd seeds (raai) 1tsp.,salt to taste. 

Without oil fry Poha in a pan, remove Poha after nicely fyd, now fry cutting of the coconut,remove it ,then fry groundnut & remove it.
Now in oil put tadka of gr . chilly,mustered seeds & curry leaves .add . frd.  Poha in tadka,add.  salt to taste.u r Poha chivada is ready.Pl. add. Daal also.

kofta curry.


                           Kofte Curry ( Punjabi Style ) 

 
Recipe:  
Ingredients: 
1) louky ( dudhi. ) medium size. 
2) gram flour 4 tbs.
3) ginger- garlic paste 1tsp.
4) azwain half tsp. 
5) salt ( accor to ur taste.) 
6) 4 green chilly chopped.
7)  1tsp. red chilly powder.
8)1 tsp corriender powder. 
9) corriender leaf's chopped.
10)  little hing .
11) 1 big size onion finely chopped.
11) 3-4 medium size tomato's to make purie. 

Making of Kofte: 

Take lauki (dudhi)  usey kaddukas kar lijiye.
Press it & remove water from it.
Add 4tbs. Gram flour. Mix it with lauki.
Add azwain half tsp.
Add ginger garlic paste .
Add little salt.
Add. Green chilly chopped 2.
Half tsp corriender powder.
Now make a batter for kofte add little water while making batter.
Heat oil for making kofte.
Make balls & fry on medium flame. ( golden fry) 
Keep aside kofte.




Making tari(gravy) for kofte: 

Take chopped onion ,add little oil to fry.
When golden fry onion add 2 green chilly & all masala half quantity which is remaining there.
Add tomato purie & little water ,mix it well 
Fry it nicely 3-4 times go on adding little-little water.
Now add water how much is required to make gravy.
Boil it then add. Kofte & give steam  atleast 5-6 minutes.
Now garnish with green corriender chopped.
Serve with Roti or Rice.

Besan ke Ladoo.

Besan ke Ladoo.
Ingredients: 
1) Semolina   ( Rava / Suzi ) 2-3 tb
2)  1Small bowl gram flour .
3)  1 Small bowl powder sugar.
4) 4-5 cardomom in powder form.
5) Almonds 10-12 ,coarsely granulated.
6)  Pistachios 10-12 finely  sliced.
7)  Pure ghee same as sugar bowl.or u can make it with less quantity of ghee as u wish.

Making :
1) Roast semolina in a non stick pan with 2-3 tbs. of ghee on slow flame.
2) Add gram flour & roast on slow flame till it is golden brown, continuous mix the mixture of semolina & gram flour.
3) Go on adding remaining ghee & mix it well till golden brown.
4) when it is golden in colour and gives nice aroma switch off the gas .
5) when it is cold  add powder sugar , cardamom powder  ,small pieces of dry fruits and mix it all.
6) Now make balls of it ,press it well with your palm ,on top add almonds and pistachios pieces to decorate the Ladoo.

PAKAUDEWALI KADHI


PAKAUDEWALI   KADHI ...


Ingredients : 

1) One medium size onion, 2) 5 garlic cloves ,3) 1/2 inch of ginger piece ,4)Cuminseeds, fenugreek seeds &  musterd seeds half teaspoon each.5) 1/4 spn  hing, 6)  1 big  full vessel of sour curd,7) 2-3 tbs .gram flour , 8) 2-3 green chilie's,9) 1tsp of coriander pwdr, garam masala half, 10)few stings of Kari patta.11) green coriander  little.12) Salt according to taste ,13) a pinch of sugar.
For making bhajiyas. : 
 green coriander ,coriander pwdr.finely chopped onion, green chilly,salt n gram flour ,mix all this ingredients n make pakoda's.
 recipe : 
Mix curd , add gram flour  again mix it with madani (wooden mathani.) .curd must b sour always remember.(one day old curd) 
Take a deep kadhai(pan) add two tbs.oil( I added Borges Olive Oil) heat the oil add cumin seeds, fenugreek seeds, mustered seeds, kari patta,green chilly pieces , ginger &  garlic (cut in small pieces ) , saute with onion ,add hing, fry till onion become pinkish in colour, add turmeric pwdr. ,now add mixer of curd n gram flour ,stir it & immediately add water, make it in milk consistency, add salt as u like, a pinch of sugar , stir it properly , there should b no lumps . get the first boil ,add green coriander ,then keep the flame slow, keep the lid on ur vessel (not to cover it fully)  in between stir it 3-4 times, within 20 -22 minutes ,b4 put it off the flame add pagodas in kadhi n then after 5-7 minutes  ,sprinkle garam masala now put the gas off & enjoy kadhi with Rice ,papad , salad .Enjoy cooking.😊
