Tea time snacks. (Tikha gathiya )

Ingredients  :  two cups Chickpea flour, two & half tsp red chilli powder, salt according to the taste, 1tbs oil, 1/2 tsp of turmeric powder, 1/2 tsp of coriander powder,  oil to fry. 
  Recipe :  Take chickpea flour in bowl add all dry ingredients, add 1tbs of oil, slowly go on adding water to make a dough ,now flat base pan on gas put oil & make it medium hot, put the dough in kitchen express  gripper & now directly press it &make it round shape of gathiya (sev) with the proper jali. Fry from both sides of gathiya till it gets  golden brown .remove it on tissue paper in a plate when it's cool down break up in small pieces. When it gets cool store it in Air tight container. Enjoy cooking. Have it with hot tea or coffee. 😊😊

Wheat flour Mathi & Namak Pare.

Ingredients : Wheat flour 3 cups, Warm pure ghee 1/2 cup for Moyan , salt as per taste, warm water for kneading dough. Oil for frying , crushed black  pepper. 

Recipe of Mathi & Namak  Pare. : Take wheat  flour, add salt, add pure ghee for Moyan, now kneed dough.keep for rest for 10 minutes. After 10 minutes make small  balls of dough & start rolling it, add crushed black pepper at centre of the puri, keep little thick puries , on medium low flame start frying mathies ,till light golden fry it. 
From same dough make like chapati, cut it in shape of shakkar pare, fry it on medium low flame till it is golden brown. Make it cool nicely & store it in Air  tight container. Serve with a hot tea or coffee. Enjoy cooking friends .

Shakkar Pare.

Ingredients : All purpose flour 4 cups, melted warm pure ghee 1/2 cup, Oil for frying, Sugar near about 500 gms.water for mixing with sugar to make sugar syrup. Warm water for kneading flour. 

Recipe : Take all purpose flour (Maida) , add warm melted pure ghee in the middle of flour, mix it with flour properly, crumble it nicely ,now kneed the flour with warm water. It should be not very hard or not very  soft. keep it aside for 10 minutes, cover it with cloth .After 10  minutes kneed the flour little, devide it in six  equal parts. Take one piece & roll it like chapati till the time  keep other pieces covered, now do marking  on chapati to cut the pieces according to your choice. Same way do it with rest of all pieces. 
In medium low hot oil fry all cutted pieces in two -three lots. Fry it till it becomes pinkish, on other side of gas make sugar syrup, check  sugar syrup drop  two drops in the water, remove it in your fingers u can see if it forms like a boll that means chasni is ready, now put the fried pieces in ready sugar syrup & very carefully  quickly go on mixing with the help of spatula. Within 5-6 minutes sugar will get  coated nicely on all the pieces. Now after five minutes dust it while shaking Shakkar pare so the extra sugar will be  separated from it  .After proper cooling keep Shakkar Pare in air tight box. Enjoy cooking friends.
