Paneer Tomato Masala

Ingredients :
2big Onions chopped,
2-3 green chillies,
3 tomatoes Puree,
1Inch ginger, 7-8 garlic cloves,
250 grams Paneer in cubes,
1tsp Red chili powder,
1tsp coriander powder,
1/2 tsp garam masala,
1/2 tsp cumin seeds,
A pich of asafoetida ,
Salt as per taste,
2-3 tbs cooking oil , 
Water.
 Recipe:
Take oil in a cooker, when oil is hot add cumin seeds , salute it now add chopped ginger and garlic cloves,mix it well ,add asafoetida .Add dry masalas ,add tomato puree ,mix it well ,add little water mix well , repeat 2-3 times.
Now add paneer mix it well with masalas and add water as per requirement ,as much gravy you need.
Give 2 whistles. This veggie you can make it in kadai also.
Open cooker and your Paneer Tomato Masala is ready , have it with Roti,Chapati , Paronthas or Rice. Happy Cooking.

रागी के डोसे।

Ingredients   (सामग्री) :
रागी (Nachni) १ कटोरी (  1cup),
उड़द दाल १/२ कटोरी (1/2 cup),
चावल १/२ कटोरी (1/2 cup),
१  टी स्पून मेथीदाना ,
१/२ इंच अदरक,
नमक स्वादानुसार लीजिए,
पानी ।
Method (विधी):
रागी, चावल, उड़द दाल और मेथीदाना को तीन - चार बार अच्छी तरह से धो लें फिर दो ढाई ग्लास पानी में भिगो कर 5-6 घंटों तक  ढक कर रख दीजिए।
६ घंटों के बाद दो तीन बार में भिगो कर रखी हुई सामग्री को मिक्सर ग्राइंडर में पीस लें। पीसते वक्त अदरक का टुकड़ा अवश्य डालें।
अब दस मिनटों तक घोल को ढक कर रख दीजिए।
जितने घोल के डोसे बनाने हों उसी में आवश्यकतानुसार नमक मिलाकर मिक्स करें और तवे को गर्म करके डोसे बना लीजिए। 
गर्मा गर्म  नाचनी (रागी) के डोसे तैयार हैं, चटनी, सांबर और आलू की सब्ज़ी के साथ खाइए।

Sabudana (Sago)Khichadi

Ingredients:
1cup of Sabudana,
1 medium size potato,
2-3 green chillies according to the taste,
 4-5 curry leaves,
1tsp of cumin seeds,
Salt as per the taste,
Oil for frying (potato) as little as possible ,
3-4 tbs of groundnut powder ,
Chopped coriander leaves,
Water.
Method:
Without crushing sabudana 2-3times wash it,add little water and soak it overnight .
Take a pan pour little oil ,peel off the potato,cut it in small pieces & put it in the oil,now fry potato pieces, after frying remove potato pieces &keep it aside.If oil quantity is more of oil,make it little less.
Put green chilly pieces,wait a second then put cumin seeds  & curry leaves,let it crackle,now add sabudana, saute for a minute,add groundnut powder ,add fryied potato pieces &   add salt as per the taste, mix it well & put the lid let's wait for two minutes then switch off the Gas. Sago (Sabudana) Khichdi is ready . Just sprinkle coriander leaves before you serve it to eat.

Okra - Potato.

Ingredients : 
Okra 200grm or as much as u want. 
2 green chillies, 
1 tomato ,
1 Onion Slices,
1tsp. Coriander pwdr, 
1tsp red chilli pwdr, 
Salt as per taste, 
1/2 tsp.garam masala
1/4 tsp. asafoetida,
Garlic 4-5,
1/2 inch of ginger in thin pieces, 
2 -3 tsp. of water
2tbs oil.
1tsp Cumin seeds .
Method :
Take a pan or kadhai add oil ,make it little hot, add Cumin seeds, let it splutter, add green chillies. 
Let Onion become pinkish, add all dry ingredients, (masalas) 
Add tomato pieces, add salt, mix it well, let tomatoes look smashed. 
Add Okra pieces (slits & made 2 pieces of each), add potato pieces, mix it.
Sprinkle 1tsp of water, mix & keep the lid, cook it on medium low flame. 
Open lid, sprinkle water, cover it again (repeat 2-3 times till veggie cooked properly.) 
At the end sprinkle garam masala on veggies & serve with hot roti or chapatis. Happy cooking to all. 😊😊
