Coconut Sweet.

Ingredients :  3cup desiccated coconut, 3/4 cup sugar, 1/2 cup milk (normal temperature), 2tbs. milk powder, 1tsp. cardamom powder, 1tsp. pure ghee, 10-12 pieces nicely chopped  pistachio 

Recipe :  Take a non stick pan ,on the gas add  desiccated coconut in a pan, stirring constantly  on slow flame, when it stats giving nice aroma  add milk powder & mix it well, now add milk & sugar go on stirring constantly, add ghee, mix it well now add cardamom powder ,stir constantly  after 7-8 minutes the mixture will start leaving the pan, spread some ghee on plate & shift the ready mix  ,press it smoothly,after ten minutes mark shape  in a pieces,sprinkle chopped pistachio press it little. After ten minutes cut it in pieces. Enjoy your coconut sweet.

Poha Chivda.

Recepie: 1/2 kg  (nylon poha)patla Poha,1/2 dry coconut, 1/2 katori ground nut ,kadi leaves, 1/4 sp.  turmeric powder, musterd seeds (raai) 1tsp.,salt to taste. 

Without oil fry Poha in a pan, remove Poha after nicely fyd, now fry cutting of the coconut,remove it ,then fry groundnut & remove it.
Now in oil put tadka of gr . chilly,mustered seeds & curry leaves .add . frd.  Poha in tadka,add.  salt to taste.u r Poha chivada is ready.Pl. add. Daal also.

Stuffed Bitter Gourd .

Stuffed  Bitter Gourd:

 Ingredients : 1) 5-6 Bitter gourd , 2) 2 medium sized onions, little tamarind ,
3) 1 tsp. red chilli powder, 4) 1tsp. coriander powder, 5) half tsp. turmeric powder, 6) half tsp. garam masala, 7)salt according to taste ,8) cooking oil for frying bitter gourd. 

Method:
Peel off the bitter  gourd & put the cuts in all bitter gourd, add some salt on them & keep it aside for 10 minutes then wash it, squeeze it. 
Now keep pan on gas & on medium flame fry all bitter gourd, 

grind onion and tamarind in a mixture jar. take 2-3 tbs. Oil in a pan, add coarsely ground onion and tamarind,saute for 3-4 minutes on medium -slow flame now add all dry ingredients & continuously saute until the mixture leavs oil, near abt 7-8 minutes  .Now slow the flame & start filling up the bitter gourd one by one. your stuffed bitter gourd are ready to  serve with hot fresh chapatis or paranthas. Enjoy cooking friends.

Brinjal Potato Masala.

Brinjal Potato Masala.
  Ingredients :
1) 3 long brinjals,  2) 2 medium size onion, 3) 2 big tomatoes, 4) 1&1/2tsp.
ginger -garlic paste, 5) 1tsp. red chilli powder(tikha lal)  + 1tsp. red kashmiri red chilli powder, 6)1tsp.coriander poser, 7)1/2 tap. garam masala, 8) 1tsp cumin seeds, 9) salt as per your taste, 10) turmeric powder, 11) 3tbs. Cooking oil ,12 ) Asafoetida.
 
Method:
Take a non stick cookware, put oil make it warm add cumin let it splutter add chopped onions, add asafoetida,  Fry it till it becomes  pinkish now  chopped  tomatoes, stir it properly, when it is smashed add little water n mix it nicely, now add peices of brinal & potatoes, mix it well, add little water, cover pan with lid, after each n every five minutes stirring is needed. When potatoes n brinjal cooked well switch off your gas stove. Enjoy your cooking, eat with parantha or chapatis.
